Make chocolate cupcakes...push a giant strawberry point down, into the middle before baking.
When totally cooled and refrigerated for a couple of hours, ice with your fave chocolate frosting, and then stick two mint leaves in the top so they look nice - kind of standing up a little, pointing in opposite directions. Slice the cupcake right down the center, so one leaf is on each side and half the strawberry shows. They look fab and are yummie!! Fun for tea time or a birthday party!
