    I am looking to collect together as many christmas cake recipes as possible. I am putting them onto and will put your shop or website details on the post as well. if you would like to share your recipe can you pm it to me please, also if you have photo's of your decorated cakes from this or previous years, I'd love to feature them too.

    I will also put links onto this thread for all the cakes submitted.

    Red velvet cupcakes for xmas

    I like to bake red velvet cupcakes for is the recipe

    2 1/2 cups all-purpose flour
    1 1/2 cups sugar
    1 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon cocoa powder
    1 1/2 cups vegetable oil
    1 cup buttermilk, room temperature
    2 large eggs, room temperature
    2 tablespoons red food coloring
    1 teaspoon white distilled vinegar
    1 teaspoon vanilla extract
    For the Cream Cheese Frosting:
    1 pound cream cheese, softened
    2 sticks butter, softened
    1 teaspoon vanilla extract
    4 cups sifted confectioners' sugar
    Chopped pecans and fresh raspberries or strawberries, for garnish

    Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.

    In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.

    Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.

    For the Cream Cheese Frosting:

    In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

    Garnish with chopped pecans and a fresh raspberry or strawberry.

    Cook's Note: Frost the cupcakes with a butter knife or pipe it on with a big star tip.

      Its really excellent idea! It will be a great source for all who wants to make best Christmas cake recipes. Last year i tried this one, it was really nice. I think you could try this once. I hope you like it, thanks.
      3 cups Butter
      5 eggs, beaten well
      1 tsp Baking powder
      2 cups Raisins
      1 cup Glace cherries
      1/3 cup Almonds, finely chopped
      1 tsp Cardamom powder
      2 cup Brown sugar
      2 cups Maida
      3 cups Currants
      1 cup Mixed chopped candied peel
      1/3 cup Almond powder
      1 tsp Nutmeg powder
      Grated skin and juice of one lemon
      1. Cream sugar and butter together till soft and light.
      2. Add beaten eggs gradually.
      3. Sift maida, nutmeg, cardamom, almon and baking powders together and add gently to butter mixture.
      4. Add cleaned dry fruit slowly.
      5. Add almonds, lemon peel and juice.
      6. Line a cake tin 16 cms to 20 cms in diameter. Bake for 1 hour on high and then for 2 hours in a medium oven.
