I have a very large box of cooking apples sitting in my kitchen and as I type a very big pan is stewing loads ready to freeze. I'm stewing enough for about 6 or 7 crumbles/pies and I still have this box full left. I've given lots away so I need recipes for other things I can do with them - any ideas?? I fancy jams/chutneys and stuff like that cos they will keep but I haven't had chance to search yet.

Core out the middle, stuff it with raisons, pour on syrup, sprinkle on cinamon, then cook.

Any cooking apples I get go into this great fruity garlic chicken curry that I love making...
Can't remember quantities of the top of my head but it uses chicken, shallots/onions, garlic, 3 cooking apples, mango, sultanas, hot curry paste, Worcestershire sauce, honey, chicken stock, soured cream...
I'm getting hungry just thinking about it.

Apple and cinnamon muffins are nice, but I think you'd only need about 1 apple to make a dozen of those.
My mum makes blackberry and apple jam.... theres a recipe here:

Thanks Indri - thats just what I was looking for. Pity I used up all the blackberries to make jam at the start of Sept!

Make the ornies.....but Lisa beat me to it!
Use your apple to make insweetened apple puree. Put the puree in a sieve and drain overnight before using. Cinnamon can be bulk bought cheaply from eBay.

I agree with that but if you have a chinese supermarket nearby they do them for pennies. I got a 500g bag for 25p.

I can let you have my Grandma's Apple Chutney recipe if you are interested - everyone who has tried says it is the best they have ever tasted. I've got dozens of jars of the stuff. I've also got Apple and Walnut chutney, Apple and Date chutney, Carrot and Apple Chutney and am considering Apple and Chilli Chutney.
I've also made various apple jellies with herbs such as sage, tarragon, mint, sage, lemon thyme - I'm sure there are some more but the wine is affecting my memory (and spelling I suspect!). Oh yes! and spiced apples too.
