I know this is bending the interpretation of crafting, but I am considering adding a section of workshops that are related to food and food stuffs - the first of which is Basic Canning and Preserving. Would people actually be interested in something like this? We are traditionally a textile based studio but my marketing background has made me realise that it is just not about making things - often the folks that come want to learn about self sufficiency. Thoughts?

I personally think the whole self sufficiency type of courses are afantastic untapped market. However, i know a lot of people who are looking toattend these types of courses/workshops are looking for the whole experience.I.e. perhaps staying in "green" accommodation and picking thefruits/vegetables from the organic garden which they will be preserving etc etc
Whether or not by just providing preserving courses will generate you enoughbusiness to survive is another question. I think if you incorporated the selfsufficiency idea with a greater range of possibilities it could work.
Just my 2 cents....

I am very interested in self sufficiency and also believe there is a market. I also think there are a lot of people who are not the full self sufficiency but are interested in the economy, quality and locality of food. These peeps may also be interested.
