I think lamington's are particular to Australia. Traditionally it is a small square piece of sponge cake dipped in chocolate sauce and rolled in coconut. Here I have tweeked the concept slightly to make these strawberry heart versions. Essentially it is store-bought sponge, cut with a heart shaped cookie cutter and dipped in syrup and coconut. The syrup is made from jelly crystals, icing sugar, butter and water. Really simple to make - albeit a little messy with 2 small children!
