Hi,

Does anyone have a good receipe for wheat & dairy free muffins? I've had a look on the net and they all look complicated! Or one has wheat or milk.

I'm fed up spending so much money buying two in a packet when I could make my own.

I'm just having a muffin baking session and I came across this recipe in Muffins Galore by Catherine Atkinson (well worth getting if you like muffins)
50g roughly chopped creamed coconut
300ml boiling water
6 tablespoons sunflower oil
225g self raising flour
25g cocoa powder
1 teaspoon baking powder
pinch salt
110g soft light brown sugar

Heat oven to 180C or gas mk 4

Melt coconut in water, add oil leave to cool

Add the dry ingredients to bowl, pour in wet ones, stir briefly

Put into 9 muffin cases and cook for 15-18 minutes

Cool in tin for 5 minutes transfer to rack to cool.

I was looking for wheat free receipe. What can I use instead of self rasing flour?

I would think rice flour or gluten free flour should work

I think (from memory of trying to bake caes for my friend lil boy with severe wheat intolerances) of you use the gluten free flour you might hav to use a dairy free yougurt or that stuff called....called...hmmm...I'm thinking cream of tartar but thats not it...its some sort of liquid type that you put in...(not being terribly helpful)

I'll come back to you...once I rememeber!
