Does anyone have a chocolate truffle receipe, where you do not use cream?
I remember making truffles in college many years ago when I did my Cake decorating course and we didn't use cream. I just can't remember the receipe! I think we used cake crumbs instead?!

These recipes are just fab. I'm also making truffles this year and looking for ideas. :)

Yes so am I but I am using my tried and trusted recipes. Sue you're welcome let me know how you get on with it. You know the other alternative to cake crumbs is to use chopped up raisins.

I made my truffles. I don't eat wheat, so I used some wheat free chocolate cakes that I buy instead of truffle sponge, butter and dark chocolate. I put vanilla essence (as I didn't have dark rum). When I first tasted it, it was quite bitter and sweet, so I put some brandy in and milk chocolate. This made it less bitter. Then I coated them in milk chocolate and white chocolate.

Oooohhh they look yummy. I didn't get around to making mine yet. My niece and I made chocolate chip muffins instead.
