I made these rhubarb squares today - some are now in the freezer and the rest are trying to be hidden from me so I don't eat them all before anyone else gets a chance to try them, so that husband of mine better hurry home for his share!!! :sm:

Take it from me they taste lovely, but I don't think they would survive whole being handled by the Royal Mail.

Given the trouble we've had with SEB, I expect you're right!

Recipe can be found here:
http://www.bbcgoodfood.com/recipes/3294/sour-cream-rhubarb-squares
(saves me typing it out from my book!).

They are incredibly yummy and as I have half of them in my freezer I can scoff some when I get back from the hospital with the new arrival. 3 weeks today - and I think it's practicing to be a future gymnast or dancer!! ;)

I'm bound to be making more rhubarb recipes over the next couple of months as it is growing really well in the garden! :D

Botanically it is a vegetable and closely realted to sorrel. Though we all tend to use it more as a fruit (but then tomatoes and cucumbers are fruits but get treated more like veg... so we are a mixed up crazy world!).

When I was a child - I used to love to go in the garden and pull a piece of rhubarb and dip it in sugar and chomp away - love it in chutney:)

The recipe asks for dark muscovado sugar. I only had light muscovado in the cupboard and thought I'd use that up rather than have 2 lots on the go.

don't blame me tipsylipsy. I put these up months and months ago! Blame whoever resurrected this thread from the depths.... though I did find some of these in the freezer last week so defrosted them and they were very yummy.
