I've just bunged this together, as the freezer is still very empty:
Feeds 5 very well.
Two chicken breasts, finely diced.
250g cooked prawns (I used king prawns)
2 'cakes' of fine chinese noodles
1 small red pepper finely diced
2 spring onions
1 pack baby sweetcorns
Chicken stock cubes
Five spice seasoning
Dried ginger powder
Fry the chicken until cooked, sprinkle with 5 spice powder, cook until browned. Put into a large saucepan. Slice sweetcorns and spring onions thinly, add to pan. Put the flat cakes of noodles into a small plastic bag and bash to bits with a rolling pin, or a meat hammer, or a can of something (not coke....) until you have little short bits.
Put 2 litres of boiling water into the pan with 4 chicken oxos, or 2 heaped tbsps Marigold chicken stock powder. Bring to simmer. Simmer gently for 5 minutes, then add noodles, simmer until noodles are soft.
Using the frying pan you used for the chicken, gently fry the prawns sprinkled with powdered ginger. Add the prawns to the pan, or share them into soup bowls to avoid squabbles, then top with the soup.
Takes about 10 minutes, and it's a main meal in our house.
It's also fairly light in fat.
